New guideline for mustard published
With the publication of the "Guideline for Mustard" by the German Food and Drink Association (Lebensmittelverband Deutschland), the current fair trade practice for these products has been established. the new guideline is a summary of the "Code of Pratice Mustard" of 2015 and the opinion of mustard of the Bundesverband der Deutschen Feinkostindustrie e.V. (Federal Association of the German Delicatessen Industry). (today: Kulinaria Deutschland e.V.).
In addition to special evaluation characteristics (e.g. salt- and fat-free dry matter of mustard of at least 12g/100g), the directive also lays down instructions for labelling and presentation.
The evaluation criteria for "sweet mustard" and "Dijon mustard" are also laid down. Furthermore, indications such as 'pungent', 'fiery' or 'strong' may only be used if the pungent taste comes from the mustard seeds.
