The use of preservatives serves to inhibit yeasts and molds (sometimes also bacteria) in foods, thereby improving their shelf life. The authorization of preservatives for certain foods is regulated by Regulation (EC) No 1333/2008. Application purposes not listed in the regulation are not permitted. Examples of the use of preservatives for preservation include potassium nitrite in cured meat products or benzoic acid in canned vegetables.
