In its 109th session, the ALS addressed the question of how additives or processing aids can generally be distinguished and in which cases such substances are subject to labeling requirements.

According to Article 3(2a) of Regulation (EC) No 1333/2008 (Additives Regulation), food additives are substances added to foods primarily for technological reasons, including during manufacturing or processing. They or their by-products may become components of the food. Examples include colorants or sweeteners.

According to Article 3(2b) of Regulation (EC) No 1333/2008, processing aids are also used for technological reasons during processing or treatment. They leave technically unavoidable residues in foods. Examples include rennet enzymes for cheese production or enzymes (amylase) for the production of dextrose.

Unlike additives, processing aids do not need to be listed in the ingredients list.

The ALS now provides a decision tree as a possible aid. This is intended to clarify questions of differentiation and possible labeling obligations.
