Arsenic in rice and rice products – why regular monitoring is important

Rice is one of the most important staple foods worldwide and is also a fixed component of many diets in Germany. At the same time, rice can contain relatively high levels of inorganic arsenic compared with other cereals. The Federal Institute for Risk Assessment (BfR) points out that inorganic arsenic compounds are classified as carcinogenic to humans and that a health-based safe intake level has not yet been derived.

The arsenic content depends on various factors. The rice plant absorbs arsenic compounds through its roots and can accumulate them in the grains. Soil and irrigation conditions, the cultivation method and the rice variety in particular play a role. Because inorganic arsenic can accumulate especially in the outer layers of the grain, processing also affects the content in the finished product.

Special attention therefore applies not only to rice, but also to rice cakes, rice flakes and other rice-based foods. Studies show that these products can sometimes have higher levels than white rice. For certain types of rice and rice products, maximum levels for inorganic arsenic have therefore been established at EU level.

For manufacturers and distributors, reliable control of raw materials and finished products is therefore an important part of quality assurance. Analytical testing makes it possible to detect potential contamination early and to verify compliance with applicable requirements.

The BAV Institut supports manufacturers and traders with analytical testing for arsenic and other heavy metals in foods. This enables raw materials and products to be specifically tested and the quality and safety of foods to be reliably ensured.
