"Cream from whipping machines, a common cause of complaints"
Especially during the summer months, cream samples are regularly criticized by the supervisory authorities. Very often, these complaints are due to the increased germ counts of pseudomonads and enterobacteria. These typical hygiene germs indicate improper cleaning and disinfection of the cream machines. However, the construction of the devices often complicates thorough cleaning and disinfection. Once a cream machine is contaminated, this contamination is often difficult to remove without significant effort.
The following points must be observed when cleaning the cream whipping machine:
- Cooling of the cream machine: DO NOT turn it off, even outside of operating hours
- Before cleaning and disinfection, as well as before assembling the machine, wash and disinfect hands thoroughly
- Follow the manufacturer's cleaning instructions
- Use the correct cleaning and disinfection agents, paying attention to dosage and exposure time
- Regular maintenance of the machine by a specialized company
Further information on cleaning the cream whipping machine can be found in the links "Fact sheets from the supervisory authorities" (see below).
