Danish study shows: game meat is frequently contaminated with STEC bacteria
The Swiss Federal Office for Food Safety and Veterinary Affairs BLV cites a study that has been underway since 2024 — a Danish study on game meat and game meat products. Approximately one quarter harbour the pathogenic STEC bacteria (Shiga toxin-producing Escherichia coli), particularly in ready-to-eat, fermented raw sausages.
While we understand preferences for natural diets, this contamination can actually become dangerous and, for example, lead to hemorrhagic syndrome with kidney failure. Consequence: deaths are possible as well as a — partly lifelong — need for dialysis.
Detection of EHEC/STEC or the corresponding pathogenicity markers. No problem at our lab!
