For many people, whipped cream is essential for ice cream and cakes. In ice cream parlors and bakeries, cream whipping machines are often used for production. Mistakes are often made when cleaning the machines. For example, 41% of the approximately 1800 controlled businesses forgot to rinse with hot drinking water afterward. This leads to disinfectant residues in the cream.

Additionally, almost all businesses (94%) did not conduct self-checks for residues of cleaning and disinfecting agents. Only a quarter of the businesses could present self-check results for microbiological examinations.
