European Commission recommends monitoring of nitrosamines in food

The European Commission has published a new Recommendation on the monitoring of nitrosamines in food. The aim is to improve the data on the occurrence of these potentially harmful compounds in various food groups and to enable a more accurate assessment of possible risks to consumers.

What are nitrosamines and why are they a concern?

Nitrosamines are chemical compounds that can form under certain conditions during the production and processing of foods. Their formation is promoted, among other things, by the presence of nitrite and certain nitrogen-containing compounds. The formation of nitrosamines can be particularly relevant in cured, fermented or heat-treated foods.

Some nitrosamines are considered genotoxic and carcinogenic. They can damage genetic material and increase the risk of cancer. Therefore, monitoring these substances is an important part of food safety.

Which foods are the focus?

The EU Commission's recommendation provides for monitoring of various food groups. These include, in particular:

The investigations are intended to provide additional insights into the occurrence of nitrosamines in different foods.

Monitoring of ten carcinogenic nitrosamines

As part of the recommended monitoring, at least ten carcinogenic nitrosamines, the so-called TCNA (Ten Carcinogenic Nitrosamines), should be examined.

The data obtained should help to better assess the exposure situation and to identify potential influencing factors in the formation of nitrosamines.

Such analyses are particularly important for food manufacturers in terms of assessing product safety and reviewing manufacturing processes.

Testing for nitrosamines in the Tentamus laboratories

In our Tentamus laboratories we regularly carry out testing for nitrosamines in food.

With reliable analytical testing we support food manufacturers in assessing their products and in ensuring high food quality and safety.

If you have any questions about our testing services, our customer advisors will be happy to assist you.
