BfR Recommendation on Frozen Berries
The Federal Institute for Risk Assessment (BfR) has updated its information sheet for large kitchens and community facilities in response to the devastating norovirus outbreak last year, with nearly 11,000 cases of acute vomiting and diarrhea. At that time, it was the largest foodborne outbreak of gastroenteritis in the Federal Republic. The new information sheet is aimed primarily at responsible persons in communal catering. According to this, not only raw, but also briefly or unevenly heated foods with frozen berries should be heated to core temperatures above 90°C to completely inactivate any potentially present viruses.
