Ökotest examines unchilled sauerkraut – pesticides and bisphenol A detected

In the current issue of Öko-Test (11/2025), non-refrigerated sauerkraut was scrutinized. A total of 28 different products were tested.

The microbiological analyses were conducted according to the recommendations of the German Society for Hygiene and Microbiology (DGHM). No abnormalities were found.

However, Öko-Test issued downgrades when pesticide residues or Bisphenol A (BPA) were detected in the products. The pesticides appeared only in trace amounts, while Bisphenol A was found exclusively in canned products. BPA is considered to be toxic for reproduction in the EU and is therefore particularly in focus for health assessments.
