The new guidelines for bread and small baked goods have been published in the Federal Gazette. The changes primarily concern the following points:
- Inclusion of new product descriptions (e.g. ciabatta, bagel, or baguette)
- Definition of products with regional significance (e.g. ham bread, spotted bread)
- Presentation of the options for labeling "traditional production" or "traditional recipe"
- Differentiation of the production method for wood-fired bread
