July 4, 2025 - Public recall of poultry sausage due to insufficient heating

On lebensmittelwarnung.de, a poultry sausage – in other words, a cooked sausage product – was recalled on 19.6.25 due to insufficient heating. This underscores the importance of a documented and uninterrupted pasteurization process, especially in the context of moving from artisanal to industrial production. This is also required by the relevant trade standards. These processes also require microbiological control of the final products, as these are meat products that are quite prone to microbial spoilage. The final packaging step also poses risks. Most often, deviations result in the detection of lactic acid bacteria and increased total germ counts.
