June 20, 2025 - Flour with Shiga toxin-producing Escherichia coli (STEC)

Shortly before Pentecost, a warning was issued against consuming a flour  that may be contaminated with Shiga toxin-producing Escherichia coli (STEC). These pathogens can lead to severe, feverish, and bloody gastrointestinal illnesses – especially when flour is used in foods that are not sufficiently cooked.

The risk increases particularly with homemade products, where basic heating rules are not always followed. Occasionally consuming raw dough can also be a pathway for pathogens. The use of a kitchen thermometer and adherence to basic hygiene standards thus become more important – even in private households.

Official food monitoring and federal authorities such as the BfR and the BVL are also increasingly considering this topic as relevant.
