A recent product recall of a semolina dessert with fruit preparation shows: Behind the category “other reasons” in public warnings, microbiological risks such as molds may hide.
Relevance for dairy products
Mold infestation – such as on the surface of fresh products – is one of the most common causes of complaints, especially by end consumers. In the legal assessment of food, the disgust aspect often takes precedence. Products with visible mold are generally classified as spoiled and not marketable – even regardless of potential toxin formation.
Important for consumers: Fresh products with high water content – such as milk desserts – should not be consumed further, even if the mold has been superficially removed.

To minimize risk, a multi-stage action plan is recommended:
- Optimization of hygiene in production and filling (e.g., aseptic processes)
- Avoidance of mold spore entry along the process chain
- Systematic evaluation of complaints
- Regular microbiological quality controls
