On 28.07.2022, the revised version of the guidelines for meat and meat products of the German Food Code was published in the Federal Gazette. The current version as of 14.04.2022 is available here.

 

In addition to some content changes, the structure has been revised in particular. An overview of the old and new guideline numbers can be found here.

 

It should be noted, for example, that for formed meat products, the formulation "joined from pieces of meat" is sufficient and the term "formed meat" is no longer required.

 

Furthermore, cooked cured meat products made from poultry meat are now regulated separately (guideline number 2.3.10). These are only made from unminced pieces, where the piece is indicated in the designation.
