Bake-off rolls in eco-test – detection of pesticides

 

In the February 2023 issue of Öko-Test, 19 types of par-baked bread rolls were tested. This included simple wheat rolls, but also crusty and stone-baked rolls.

The following test parameters were examined:

·         Pesticides

·         Acrylamide

 

Pesticides

Some par-baked bread rolls in the test showed traces of concerning pesticides, such as cypermethrin and pirimiphos-methyl. Cypermethrin is an insecticide and toxic to bees and is therefore criticized. Pirimiphos-methyl is not allowed to be used on German fields. However, in France, where the wheat for the affected rolls is said to come from according to the provider, the pesticide has approval.

 

Acrylamide

All tested par-baked rolls were well below the official guidelines for acrylamide. Acrylamide forms in carbohydrate-rich foods processed or prepared at high temperatures, such as roasting and baking at over 120 degrees Celsius. It can be genotoxic and carcinogenic.
