BAV-Online Training on HACCP

The Federal Institute for Risk Assessment (BfR) released a revised version of its HACCP leaflet "Questions and Answers on the Hazard Analysis and Critical Control Point (HACCP) System" in January of this year.

This revised version replaces the leaflet published in 1996 by the former BgVV (Federal Office for Consumer Health Protection and Veterinary Medicine). It now considers interim developed standards such as ISO 22000ff. and recommendations of the European Commission for flexible handling of the concept. However, the revised "Code of Practice" of the Codex Alimentarius from October 2020 has not been included in the BfR leaflet.
