For many food producers who manufacture ready-to-eat foods that can promote the growth of listeria, it is important to demonstrate that their products do not exceed the limit of 100 CFU/g by the end of the shelf life. If the establishments cannot provide this proof, the stricter food safety criteria at the manufacturer level of "not detectable" in 5x25g product apply. If the chemical-physical data or the shelf life of <5 days do not provide a clear statement on growth potential, challenge or stress tests with Listeria monocytogenes play an important role in this question.

To this end, the working group "Meat and Poultry Meat Hygiene and Specialist Questions of Foods of Animal Origin (AFFL)" has designed a decision tree for ready-to-eat foods to classify them into criteria 1.2 and 1.3 according to the requirements of Regulation (EC) No 2073/2005.
