According to statement no. 003/2018 by the BfR (Federal Institute for Risk Assessment) from January 26, 2018, more than 100,000 cases of diseases are recorded in Germany, whose pathogens are foodborne.
These are not only mild gastrointestinal diseases, but also food infections that can be fatal, especially among individuals belonging to risk groups (infants, pregnant women, the elderly, or people whose immune systems are weakened by severe pre-existing conditions).
Therefore, it is of central importance to handle food properly in communal catering and the gastronomy sector, as improper handling can promote the occurrence of disease outbreaks.
The cases of individual diseases reported in Germany and the European Union in 2016, caused by foodborne pathogens, show that Campylobacter is the main cause of reported illnesses both in Germany (approx. 74,000 cases) and in the EU (250,000 cases).
