Ergosterol: A Quality Parameter and Indicator for Molds in Tomato Products
Ergosterol is a component of the cell wall of fungi. It is not present in plant, animal, and bacterial cells. For this reason, ergosterol can be used as an indicator of contamination of tomato products with mold. Ergosterol is used as a hygiene marker by both official food surveillance and food manufacturers.
Currently, there are no legally binding tolerance or limit values for ergosterol in food at either the national or EU level. Only in the Code of Practice of the European Fruit Juice Association (AIJN) is an acceptable content of 0.76 mg/l specified for tomato juice. Pristine EU merchandise should meet this requirement.
