Escherichia coli (STEC) in flour and dough:

In recent years, official food monitoring in Germany has repeatedly detected E. Coli in flour, baking mixes, and dough samples. Of particular importance for humans are E. coli that produce Shiga toxins. These are abbreviated as STEC. STEC that cause severe illness in humans are referred to as enterohemorrhagic E. coli (EHEC). Consumers can protect themselves against infection with STEC/EHEC by following the rules of kitchen hygiene and not consuming bread, cake, pizza, and cookie dough unbaked.
