High acrylamide levels in vegetable chips

As part of the BfR MEAL Study (meals for exposure estimation and analysis of foods), the acrylamide levels in 230 foods were examined. The highest levels were found in vegetable chips (1430 μg/kg), followed by potato pancakes (558 μg/kg) and fried potatoes (450 μg/kg). In contrast, potato chips showed lower levels with an average of 190 μg/kg.

Food manufacturers are required to minimize the acrylamide levels in their products and to adjust the manufacturing process accordingly. The Regulation (EU) 2017/2158 sets guideline values for acrylamide in various foods.
