Newversionguidelinesforfruitjuiceandfruitnectar–Newrequirementsincludehygienerequirements
The Federal Ministry of Food and Agriculture (BMEL) published the new version of the guidelines for fruit juice and fruit nectar dated January 13, 2023, on its homepage on March 9, 2023.
The new version now includes a description for fruit nectar in addition to fruit juice. In particular, characteristics for fruit juice and fruit nectar are now described with regard to the required hygiene and sensory properties.
Furthermore, the minimum values for the relative density for fruit juice and fruit juice from fruit juice concentrate as well as the minimum Brix values for fruit pulp and fruit pulp from fruit pulp concentrate have been adjusted to the Code of Practice of the European Fruit Juice Association (AIJN).
For all pineapple juices originating from Central and South America that are not reconstituted from concentrate, lower minimum total acidity levels are described.
In addition to clarifying the products in the definitions, the physical production methods have been updated, such as membrane filtration or high-pressure processing (HPP).
