New guideline for mustard published
With the publication of the “Guideline for Mustard” by the German Food Association, the current fair trade practice for these products has been established.
The new guideline is a summary of the “Code of Practice Mustard” from 2015 and the opinion on mustard from the Federal Association of the German Fine Food Industry (now: Kulinaria Germany e.V.).
The guideline not only specifies particular assessment criteria (e.g., salt- and fat-free dry matter of mustard of at least 12g/100g) but also provides instructions for labeling and presentation.
Assessment criteria for “Sweet Mustard” and “Dijon Mustard” are also established. Furthermore, indications like “hot,” “fiery,” or “strong” may only be used if the spicy taste comes from the mustard seeds.
