Cleaning and disinfectant residues in whipped cream from cream dispensers
Whipped cream is a popular and indispensable component in desserts, pastries, and ice cream creations. Unfortunately, this popular product is also a hygienically and microbiologically perishable food. Thorough cleaning and disinfection of cream machines is therefore essential. The cleaning and disinfecting agents used often contain quaternary ammonium compounds. The main representatives are benzalkonium chlorides (BAC) and dialkyldimethylammonium chlorides (DDAC).
However, if the cleaning and disinfecting agents are not thoroughly rinsed afterwards, residues can transfer into the cream.
For this reason, in 2021, whipped cream samples from cream machines were tested for cleaning and disinfecting agent residues as part of the National Monitoring Plan (BĂp). Residues were detected in every fifth sample. In several cases, the established maximum residue limit was even exceeded.
