Salads in ready-to-eat packages are frequently contaminated with disease-causing germs such as Bacillus cereus, Shiga toxin-producing E. coli, and Listeria monocytogenes

 

Due to inadequate hygiene measures during production, storage, and dispensing, cut and pre-packaged salads can be contaminated with disease-causing germs. The moist environment prevailing in such packaging can additionally promote the multiplication of pathogenic germs.

As part of a nationwide official monitoring program, a total of 428 samples of lamb's lettuce, arugula, and loose-leaf lettuce in pre-packaged form were examined in 2021.

The risk of microbial contamination can be reduced by simple hygiene measures and regular training of employees.
