Due to the detection of the mold toxin Ochratoxin A (OTA), an official recall of pistachio kernels has been initiated. 

OTA is a mycotoxin produced by molds of the Aspergillus and Penicillium genera and is found in most food categories. It is regularly detected especially in grains, dried fruits but also in coffee and wine. The European Food Safety Authority (EFSA) considers OTA to be a public health risk for most consumer groups.

For several years, we have successfully offered identification of bacteria and yeasts using MALDI-TOF. From now on, we can extend this service to molds as well.  In the MALDI-TOF method, a mass spectrum of the mold is compared against a database. This database contains a wide variety of spectra of different microorganisms. Our database has recently been expanded by more than 1,000 new mold spectra.
