Stiftung Warentest: Notable Findings in Pork Neck Steaks – Listeria, Salmonella, and Resistant Germs Found
In the August 2023 issue, Stiftung Warentest examined 12 pork neck steaks, of which 7 achieved good results. However, microbiological abnormalities were found in 5 of the tested steaks, including the presence of Listeria monocytogenes and Salmonella. Both can lead to serious infections (especially in immunocompromised individuals) but are killed when thoroughly cooked.
Furthermore, antibiotic-resistant germs were detected in 3 other products, including ESBL (Extended-Spectrum Beta-Lactamase) resistant germs and MRSA (Methicillin-resistant Staphylococcus aureus). These resistant bacteria can cause difficulties in treating infections. ESBL and MRSA can occur in meat when animals raised for meat production are infected with these resistant bacteria. To minimize the spread of ESBL and MRSA in meat, it is important to implement appropriate hygiene and antibiotic monitoring measures in animal husbandry. Regular testing of animals and slaughterhouses can help reduce the risk of contamination and ensure consumer safety.
