Acrylamide in Gingerbread – Reference Values of Regulation (EU) 2017/2158
In 2017, EU Regulation 2017/2158 established mitigation measures and benchmark levels for acrylamide in foodstuffs.
For gingerbread, the regulation sets a benchmark level of 800 µg/kg. Food business operators are obliged to apply the mitigation measures and to verify compliance with the benchmark levels through analyses if necessary.
The Bavarian State Office for Health and Food Safety (LGL) examined a total of 46 gingerbread samples for acrylamide in 2017. Of these, 11% were above the benchmark level, all exceedances were attributable to samples from artisanal production.
