Allergen labeling of sulfite in food service establishments
The proper labeling of allergens is becoming increasingly important in catering establishments.
The question now arises whether in gastronomy, for dishes prepared with ingredients containing sulfites, such as wine or dried fruit, sulfite must be declared as an allergen regardless of the amount?
The Committee of Food Chemists from the Federal States and the Federal Office of Consumer Protection and Food Safety (ALS) has made the following statement in an opinion on this matter:
“For dishes prepared with foods containing sulfites, sulfite must be labeled above a quantity of 10 mg/kg. Since the amount of sulfite in prepared dishes is generally not known at the time of production, it is recommended in the interest of consumer protection to label sulfite regardless of the amount of sulfite.”
