ALS Session: Nutritional Declaration of Dried Legumes and Cereal Grains

The ALS (Working Group of Food Chemical Experts of the Federal States and the Federal Office of Consumer Protection and Food Safety) addressed at its 114th meeting the question of whether a nutritional declaration is necessary for fully matured legumes and cereal grains, provided that the products have been after-dried.

According to the ALS decision, a slight additional drying of already predominantly dry legumes and cereal grains does not constitute a significant alteration of the original product. The ALS considers these products to be unprocessed products that consist of only one ingredient or ingredient class. Thus, such treated products are exempt from mandatory nutritional declaration.
