In 2017, 504,794 establishments were inspected in Germany, and 370,492 samples of food and consumer goods were examined. The rates of non-compliance remain at a relatively high level as in previous years.
During establishment inspections, 13.6% were objected to, 12.9% for samples, and 15.4% for consumer goods in contact with food. For establishment inspections, deficiencies in operational hygiene were the leading cause of non-compliance at 49.2%, followed by deficiencies in hygiene management at 23.2%.
For the samples, errors in labeling/presentation were the most common cause of non-compliance at 59.6%. Microbiological contamination was the second most common cause of non-compliance at 15.3%.
