ApplicationsofMALDI-TOFMethodsinFoodAnalysis
At BAV Institute, the MALDI-TOF method is routinely used for the identification of microorganisms. The method has many advantages, particularly being very fast and reliable.
The principle of the method is based on mass spectrometry. In a report from November 2018, we have also described the measurement method.
In addition to its use in microbiology, there are further potential applications in food analysis, although research is still needed here to build the corresponding databases. Further potential applications include:
- Distinction of mammalian species
- Investigation of the origin of certain foods
