Each food business and kitchen is legally required to implement an HACCP concept or procedures based on HACCP principles according to Article 5 of Regulation (EC) No 852/2004 on food hygiene. This aims to ensure, in particular, food safety and hygiene.
The members of the HACCP team must be adequately trained in the application of HACCP principles. This is also a legal requirement according to Annex II, Chapter XII in conjunction with Article 4 of Regulation (EC) No 852/2004 on food hygiene.
