BfR: Revised HACCP Leaflet

The Federal Institute for Risk Assessment (BfR) published a new version of its HACCP information sheet "Questions and Answers on the Hazard Analysis and Critical Control Point (HACCP) System" in January of this year.

The new version replaces the leaflet originally published in 1996 by the former BgVV (Federal Institute for Health Consumer Protection and Veterinary Medicine). It now takes into account standards developed in the meantime, such as ISO 22000ff., and recommendations from the European Commission for flexible handling of the concept. However, the new version of the "Code of Practice" of the Codex Alimentarius from October 2020 was not included in the BfR information sheet.
