BfR publishes information on 3-MCPD, 2-MCPD and glycidyl fatty acid esters

The Federal Institute for Risk Assessment (BfR) has published a questions-and-answers catalog on the substances 3-monochloropropanediol (3-MCPD), 2-monochloropropanediol (2-MCPD), and glycidyl fatty acid esters.

These substances are process-related contaminants in food. They are formed, for example, during the refining of vegetable oils and fats or when heating fatty and salty products. As they are potentially harmful to health, they are considered undesirable in food.

In the new FAQ catalog, the BfR provides information on the formation of the compounds, possible health risks, and tolerable intake levels. The complete questions-and-answers catalog is available here:
