The Federal Institute for Risk Assessment (BfR) has updated its leaflet for large kitchens and communal facilities in response to last year's devastating norovirus outbreak, with nearly 11,000 cases of acute vomiting diarrhea. This was the largest foodborne outbreak of gastroenteritis in Germany to date. The new leaflet is primarily aimed at those responsible for communal catering. It recommends that not only raw but also briefly or unevenly heated foods with frozen berries should be heated to core temperatures of over 90°C to fully inactivate any present viruses.
