BfR statement on keeping food hot
In July 2020, the Federal Institute for Risk Assessment (BfR) published a statement on "Protection against foodborne diseases when keeping food warm".
Previously, the BfR recommended a temperature of at least 65°C for keeping food warm. Following current literature research and the application of mathematical simulations, the BfR now advises to "keep heated food hot enough that it maintains a temperature of at least 60°C at all points until consumption."
Studies have shown that the growth of B.cereus, B. cytotoxicus, and C. perfringens is unlikely at temperatures as low as 57°C. However, to minimize the hazard potential as much as possible, the recommendation is slightly higher.
