Chlorate in food
Chlorates are salts of chloric acid that were previously used as active substances in plant protection products or biocidal products. This use is no longer permitted in the EU. Nevertheless, residues have repeatedly been detected in food from different countries of origin, including Germany.
The main cause of this is contact with water that has previously been treated with chlorine-containing products. The contamination of the food thus occurs, for example, through residues that remain on work surfaces and equipment after cleaning and disinfection.
The European Union (EU) has set maximum residue levels for chlorate in food, which are based on the assessment of the health risk of chlorate in food by the European Food Safety Authority (EFSA).
