Commentary on DIN 10506: Food hygiene - Community catering - In BAV Newsletter 01/2013
In the current revision of DIN Standard 10506:2012-03 (Food Hygiene – Mass Catering), Dr. Christian Kaiser from the BAV Institute contributed as a member of the DIN working group. The newly available commentary on the standard is primarily directed at mass catering institutions, such as canteens, cafeterias, kitchens, and food dispensing points. However, inns and restaurants can also refer to the standard. The aim of the commentary is to make the recommendations transparent for users and to facilitate practical implementation.
