Labeling of Unpackaged Poultry Meat
Due to recent complaints from authorities and customer feedback, we would like to point out the 2012 regulation on labeling of poultry meat. Just as it is largely implemented for prepackaged poultry meat, unpackaged poultry meat must also be labeled with an expiration date. Next to or near the offered goods, a notice (e.g. sign) must be placed containing the expiration date with the wording “to be consumed by +4 °C until...“. After the date expires, the meat must not be further marketed.

Contamination of Food by Aluminum
Aluminum has once again caught the media's attention. The cosmetics industry has already partially adjusted its production, avoiding aluminum salts in deodorants. In a report by the NDR magazine “Markt”, aluminum foil was investigated as a contamination source in foods. It was found that aluminum can transfer to certain foods. Foods that are high in salt and acid as well as lye attack aluminum foil, which can lead to increased values in the foods. This fact is not new, and corresponding warnings are printed on aluminum foil packaging.
The issue of directly baking lye pastries on aluminum sheets was also revisited. The lye used attacks aluminum sheets and significantly increases the aluminum values of the finished product. The Society of German Chemists has compiled a position paper on this (Link to the position paper). Likewise, the bakers' guild has created an information sheet detailing which baking sheets or processes are suitable for producing lye pastries. The information sheet is available on the guild's homepage for members.
