Current draft standard E DIN 10508 - Temperatures for food

This DIN standard is highly relevant for food companies as well as for the food trade. Therefore, we would like to draw attention to the new draft.

The most important changes are:

  1. in section 3, a definition for highly perishable foods was added
  2. in section 4, the requirements for cold storage, cooling, hot holding, and permissible deviations have been revised
  3. in section 5, the temperature requirements for deep-frozen, frozen, and refrigerated foods as well as for hot prepared meals have been updated

The draft standard is now presented to the public for review and comment. It is also available in the DIN draft standards portal. This online service provides all commentators the opportunity to read and comment on content from current draft standards free of charge. You can find the DIN draft standards portal at the following address: http://www.entwuerfe.din.de. Printed copies of this draft standard can be obtained for a fee from Beuth Verlag.
