Listeria monocytogenes was detected in a tuna carpaccio.
Listeria are widely distributed in the environment and can contaminate food at various stages of production and processing. Foods of animal origin are particularly affected. Subsequent contamination of both animal and plant foods can also occur due to inadequate hygiene measures during processing, such as poor personal hygiene or insufficiently cleaned machines and equipment.
