The draft standard "E DIN 10518:2018-06 Food hygiene – Production and delivery of unpackaged ice cream to the consumer – Hygiene requirements, testing", published in June 2018, includes the following changes compared to the current version (DIN 10518:2008-05):
- The scope of the standard is expanded and specified – now all ice cream machines for artisanal production and not just "soft ice cream machines" are covered.
- Requirements for the planning and construction of ice cream machines within the scope have been deleted, as safety and hygiene requirements for ice cream machines will be defined in the future European standards DIN EN 16876, DIN EN 16878, and DIN EN 16881.
- The normative annexes A "Operation of ice cream machines" and annex B "Proper handling of the raw materials used" have been integrated into the main part.
The draft standard is submitted to the interested public for review and comment. Devices for ice cream production at home or for industrial processes are not covered.
