Glycoalkaloids in Potatoes: EFSA Risk Assessment
Potatoes, tomatoes, and eggplants belong to the nightshade family. These plants naturally contain compounds known as glycoalkaloids, which serve as a defense against pests.
However, excessive intake of these secondary plant compounds can cause symptoms of poisoning in humans, such as acute gastrointestinal disturbances, nausea, or vomiting.
According to current EFSA findings, adverse effects are expected starting from a dose of 1mg/kg body weight. The content of glycoalkaloids can be reduced by processing the food, such as peeling, cooking, or frying.
