The "hygiene pillar" in the food industry with publications on the Internet is imminent nationwide. Corresponding reports are already being published in the federal states of NRW and Saarland. Presumably from spring 2019, the authorities will be obligated nationwide to inform the public about the following cases:
- when exceeding statutory limit values, maximum contents or quantities (prerequisite are the results of at least two independent examinations, usually by state examination facilities)
- in case of sufficiently justified suspicion that regulations for the protection of consumers against health hazards, deception, or compliance with hygiene requirements have not been met to no insignificant extent or repeatedly, and the imposition of a fine of at least €350 is to be expected
Of course, these incidents should be avoided as much as possible, as publications can have serious consequences for companies in individual cases.
To avoid complaints, we particularly recommend that you pay attention to the following points:
- Basic hygiene and other preventive measures
- HACCP concept including documentation
- Training of personnel regarding hygiene, if applicable HACCP, and follow-up instruction according to §43 para. 4 Infection Protection Act (IfSG)
- Representative sampling plan (self-monitoring)
- Labeling requirements
- Supplier evaluation and selection
