Infections from consuming untreated raw milk

 

Raw milk (untreated milk) can be contaminated with bacteria such as Salmonella, Escherichia coli (E. coli), or Campylobacter. These can cause food infections, which can be particularly dangerous for people with weakened immune systems, such as infants, pregnant women, and the elderly. To reduce the risk of infection, raw milk should be heated (at a minimum of 72 °C for 15 seconds) before consumption. This is especially true if the milk is purchased directly from the producer. Packaged raw milk purchased commercially, known as certified milk, is strictly controlled for microorganisms during production and processing, reducing the risk of infection. However, for particularly sensitive populations, certified milk should also be heated before consumption.
