Judgment: Cordon Bleu must contain cheese and ham - In BAV Newsletter 03/2012

A Cordon Bleu that only contains a cheese preparation and turkey ham violates the prohibition of deception under the Food and Feed Code. According to a recent court ruling, the trade designation “Turkey Form Cuts Cordon Bleu; slices made from partly finely chopped turkey meat, assembled, filled with ham and cheese, breaded and cooked” is misleading.

According to general trade perception, the term “ham” refers to pork ham. Consumers therefore expect a filling with pork ham in a “Cordon Bleu.” The use of the term “cheese” for the filling of the turkey slices is also misleading, as only a cheese preparation is used, thereby deliberately feigning a higher quality of the filling.
