The Federal Office of Consumer Protection and Food Safety (BVL) has evaluated the results of the nationwide food monitoring from 2013, among other things, for communal catering. The focus was on checking the hot-holding temperatures in meal services at daycare centers and schools. To ensure no dangers from bacteria and viruses occur during hot-holding, a minimum temperature of 65°C is necessary.
In 13% of the inspected locations, the minimum temperature was not maintained. In many places, it was found that the temperature was not measured or only irregularly measured. Often, there were no technical means (e.g., hot-holding basins, stoves) to keep the meals warm. As this involves a particularly sensitive consumer group (children, adolescents), increased official inspections have been announced. (Source: www.bvl.bund.de)
