Last year, the Federal Institute for Risk Assessment (BfR) once again commented on the topic "Protection against foodborne diseases when keeping food warm".
According to the results of several studies, growth of B. cereus, B. cytotoxicus, and C. perfringens is not expected at a temperature of 57°C or above. However, to minimize the potential hazard as much as possible, the BfR recommends "keeping heated food so hot until consumption that it has a temperature of at least 60°C in all areas." This represents a reduction of 5°C from the previous recommendation.
